Heart-Healthy Recipe: Beef Wellington

While this holiday season has been anything but normal, there are simple ways to make the most of it and to make it feel more festive. As we all stay safe and avoid large gatherings, cooking your favorite seasonal dishes – and trying a few new recipes – can be an easy and delicious way to bring a touch of the holidays home. Between Christmas cookies, hot cocoa and comforting casseroles, there’s certainly no shortage of cooking options. However, many of these holiday favorites may not be the healthiest.

To help you enjoy a fitting holiday feast without sacrificing your heart health, we have a delicious beef wellington recipe you’ll be craving to add to the menu. Packed with heart-healthy mushrooms, low-sodium turkey bacon and flavorful seasoning, this beef wellington recipe will be a new holiday classic.

Ingredients
  • (4) 6 oz beef tenderloins
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 4 c minced mushrooms
  • 4 strips Low Sodium Turkey bacon, chopped
  • ¼ c unseasoned breadcrumbs
  • 2 Tbsp dried mustard
  • 1 Tbsp cider vinegar
  • 1 c olive oil
  • 1 pack phyllo dough sheets
Directions
  1. Preheat oven to 400 degrees
  2. Over medium heat, sauté garlic, mushrooms, bacon and shallots until almost all of water is cooked out (10 mins)
  3. Stir in breadcrumbs and set aside
  4. Season tenderloin on all sides with Mrs Dash and sear on high heat to form a crust on the outside
  5. Mix dry mustard and vinegar to form a paste and brush on all sides of steaks
  6. Unroll phyllo pastry sheets and brush individual layers with olive oil, stacking the sheets together like paper (8 layers)
  7. Spoon 2 Tbsp of mushroom mixture onto middle of the left side of dough sheets
  8. Place 1 filet on top of mushroom mixture and roll towards the right until filet is covered completely
  9. Trim each side and fold under to make a “pillow”
  10. Repeat process with other steaks
  11. Brush pastries with egg wash (equal parts egg to water whisked together)
  12. Place on sprayed sheet pan and bake until desired temperature is reached (For medium rare, 125 degrees, it will take approx.15 minutes)
